So hitting our list of FOOD DIARIES Act 5 , today i will share another super easy to make recipe!!! It is a pancake originated from Morocco which has the particularity of having a lot of holes!!!
It is called BAGHRIR in Morocco or CREPE MILLE TROU in French language! It is simply a delicious pancake perfect for tea time!
1000 HOLES PANCAKE
For this recipe you will simply need :
• Flour 200gms
• Semolina 110gms
• Salt 5gms
• Yeast 8gms
• Baking powder 11gms (I used 1 packet of Alsa)
• Water 400ml
Assemble all the ingredients in a blender jug and blend for 2 minutes with the water till you get a smooth pancake mix!!
Once well smooth, reserve in a bowl, cover with plastic film and let rest for 1 hr in an ambient temperature!
After the resting time, heat up a non stick pan and grease it slightly. Pour the pancake mix but don't touch it once it is in the pan!!!
After 20 seconds, you will start finding small holes appearing on the pancake! Don't touch it at all, let it cook!!!
After 1 minute on the fire, you will see the top also starting to dry and cook. More holes will appear!!
This is when you know it is ready! Completely dry on the top! Remember don't turn it over! Now it is ready to eat!!!

Normally we eat it with melted butter and honey! And of course accompanied with a nice Moroccan mint tea!!!
