Chinese Chicken and Fresh Pineapple Stir Fry

As you know by now, we love stir frys. This is a Chinese chicken and pineapple stir fry. Along with the sweetness of the fresh pineapple and the combination of the heat...this is a winner. When I buy fresh pineapples I usually buy two...one for a snack and the other is for a stir fry.

The VIDEO RECIPE below is for a Chinese beef pineapple stir fry but I use the same recipe for chicken. I usually make lots of sauce because we have rice on the side. Hope you give this stir fry a try...we just love it!

Chinese Chicken and Fresh Pineapple Stir Fry

INGREDIENTS:
1 pd. sliced / cubed chicken
1 cup diced onions
1 cup bell peppers
1 1/2 cups fresh cubed pineapple
chopped green onions
peanut oil (OR, high temp oil)

Chicken Marinade:
1 tbsp. light soy sauce
1 tsp. sesame oil
2 tsp. rice vinegar
2 tsp. cornstarch
1/4 tsp. baking soda
*Mix chicken and above ingredients together in a bowl.
Marinate for 20- 30 minutes

Sauce:
1/2 cup chicken broth
3 tbsp. Hoison sauce
2 tbsp. light soy sauce
1 tbsp. rice vinegar
1/2 to 1 tsp. sesame oil
1 -2 tbsp. honey / brown sugar
1 tsp. chili garlic sauce - or more if you like
3-4 cloves minced garlic
1 tsp. crushed ginger
2 tsp. cornstarch
*Mix above ingredients together in a bowl

In a pan on high heat add oil (high temp oil) to coat bottom, add chicken, spread out and let cook for 15-20 seconds before stirring. Cook and stir chicken for 3-5 minutes or until done and remove from the pan.

Add 1 tbsp. of oil to pan, add onions and bell peppers and stir for 2 minutes.
Add pineapple, cook and stir for 2 minutes.

Add chicken and juices back into the pan and stir to combine.
Add sauce, cook and stir for 1 minute or until sauce thickens.
Serve immediately.

Serving tonight with jasmine rice and garnished with chopped greeen onions.
Enjoy.
