This is an easy and healthy and delicious recipe using smoked turkey, fresh green beans and potatoes. Smoked turkey thighs, drumsticks and wings are a great substitute for ham/pork having almost the same smoky flavor. This is another recipe from my childhood and from the Pennsylvania Dutch Amish country. Although we do not eat pork anymore, using the smoked turkey keeps my childhood food memories alive.
Smoked Turkey Green Beans & Potato Soup Recipe
INGREDIENTS:
2-3 pds smoked turkey thigh, drumsticks or wings
10-12 cups chicken broth
1 cup diced onion
1 cup diced carrots
2-3 cups diced green beans
3-4 cups diced bite size potatoes
salt and pepper
Take the skin off the turkey meat as much as you can and rinse thoroughly. This will help remove some of the salt.
Place in a crock pot and add 10-12 cups of chicken broth and cook on low for 3-4 hours or high for 2-3 hours.
You can cook on the stove top as well. The meat is smoked so it is already cooked.
Remove the turkey meat and chill both the meat and broth.
Once cool you can skim the fat off of the broth.
In a soup pot on high heat bring the broth up to heat and add 1 cup of diced onion and carrots, salt and pepper to taste.
Stir and cook for 10 minutes at a simmer.
Next add approx. 2-3 cups diced green beans (you can use frozen), bring up to a simmer, cover and cook for 10-15 minutes.
Add about 3-4 cups diced bite size potatoes, bring up to boil and cook for 20 minutes or until the potatoes are fork tender. Add the chopped turkey meat, stir and heat through.
Serving with corn bread. Enjoy.
