This is a homemade CLASSIC Rice A Roni recipe. Easy and can serve as a side dish or add meat and make a meal. Great flavor. Enjoy.
Homemade Rice A Roni Recipe
INGREDIENTS:
1 cup washed & drained long grain white rice
1/2 cup arborio rice
1/2 cup cut up vermecelli OR angel hair/
spaghetti pasta - about 1/2 to 3/4" long
4 cups chicken broth
1 cup chopped button mushrooms
1 cup frozen peas
1 cup chopped onion
1 tsp poultry seasoning
1 tsp fresh thyme
1 tsp minced garlic
salt and pepper
2 tbsp butter
2 tbsp extra virgin olive oil
In a pan on low medium add butter and olive oil.
Melt and then add white rice, arborio and vermecelli. Stir constantly and toast for 5-8 minutes until the rice changes to a brown caramel color.
Then add onions, mushrooms and minced garlic.
Stir and cook for 1-2 minutes then add salt, pepper, thyme and frozen peas. Stir and cook for 1-2 minutes.
Slowly add chicken broth, then the poultry seasoning.
Bring to a boil, cover and reduce heat to low. Cook for 20 minutes, remove from heat and let set covered for 5 minutes.
Stir to combine ingredients. If you like a little dryer you can decrease the broth by 1/4 cup or if you like wetter you can add 1/4 cup liquid.
Serve as a side dish or make a meal by adding meat.
