This is rigatoni in a meat sauce. I actually make it just like spaghetti with meat sauce and you can find that recipe below. I vary on the veggies I use depending on what I have on hand. Sometimes I will add cheese to the sauce, mix with the rigatoni and bake.
Topped with some basil and Parmesan cheese.
Side of garlic Parmesan toasted pita bread and pickled cucumbers/onions/jalapenos.
INGREDIENTS:
1 pound ground beef
1 cup diced onions
1 cup diced bell peppers
1 container of slice mushrooms
1 28oz can crushed tomatoes
1 28oz can tomato sauce
2 tsp. basil
2 tsp. oregano
2 tsp. Italian seasonings
1 tbsp. minced garlic
1 tbsp. tomato paste
salt and black pepper
***extra seasonings as wanted - I added 1 tsp combination basil/italian seasonings/oregano at last 10 minutes of
cooking. This gives it a burst of freshness and extra flavor.
In a pan on medium heat add ground beef, stir, chop and cook for 5 minutes until most of liquid is absorbed. You can drain the excess fat.
Add onions, bell peppers, mushrooms, salt and black pepper.
Stir and cook for 3-4 minutes.
Add minced garlic and tomato paste. Stir and cook for 1-2 more minutes.
Add in can of crushed tomatoes and tomato sauce.
Turn up heat to med high, stir to combine.
Add in seasonings, stir to combine.
Bring up to a boil, turn heat down to a low simmer, cover and cook for 45 minutes. Stir occassionally.
After 45 minutes give it a taste test. Add seasonings as you wish. Stir and cook for another 10 minutes.
Mix with rigatoni and top with parmesan cheese.
