We have a unique relationship with food; we truly honor it as the giver of life force, and we live intimately connected to it. We prepare all of our cooked food over fire in our super sustainable outdoor kitchen. To learn more about food in our community, please read our previous post.

Potatoes are one of the foods we often have in overabundance, and they are also an Eden Knight favorite! We enjoy them prepared in a number of ways, from mashed to boiled to fried--the Eden Knights have never met a potato they didn't like.

The food formula we share today is a highly spiced potato dish with Indian flavors. It has enormous health benefits from the vegetables and spices. Potatoes contain vitamin B6, potassium, copper, vitamin C, manganese, phosphorus, niacin, dietary fiber, pantothenic acid, as well as many antioxidants. Onions have incredible antimicrobial properties, and turmeric is a well-known anti-inflammatory. 

Without further ado, here is our food formula for INDIAN INSPIRED POTATOES:


Try adding peas, carrots, or cauliflower for even more Indian flavor! This is delicious served with cucumber raita, green veggies, our Coconut Curry Dal Lentils.
