Today we are going to prepare some apricot cookies!
You will need:
150 gr. Butter | 100 gr. Sugar |
---|---|
200 gr. Self-rising Flour | 200 gr. All pourpuse Flour |
1 egg | 2 Teaspoons Vanilla Essence |
Apricot Jam |
Elaboration:
Your butter should be at a certain temperature (about 25ºC or 77ºF) that makes it acquire an intermediate state between liquid and solid, the "ointment point". Mix your butter with the sugar and the vanilla essence.
Sift the flour and add it to the dough, then add one egg. Cover with a film, so that your dough doesn´t dry up and leave in the fridge for about two hours.
Take it out the fridge and stretch it with a rolling pin. Use a small glass (about 4 cm diameter) and use it cut the dough to form each cookie. Push the center of each cookie with your finger and put some apricot jam.
Cook in the oven at medium heat for fifteen minutes and your cookies are ready!
