Today on FOOD DIARIES Act 7, I will share with you the recipe of my lunch for today! We must keep it easy on a Lazy Sunday especially with the rainy and cold weather here in Mauritius!
If you are lazy too, why not try this out today! As usual easy and quick recipe!
CHICKEN AND CARAMELIZED ONION PANINI
For this delicious Panini you will need:
• Panini bread 2pcs cut in halves.
• Sliced cheddar cheese 2pcs
• Ketchup and Mayo 2sp – Mix together
• Tomato 1pcs – Sliced
• Lettuces
• Gherkins 4pcs – Sliced
• Onion 1pcs – Cut in big rings
• Brown sugar – 5gms
• Olive oil – 3tsp
• Chicken breast – 120gms – Cut in small pieces
• Ginger and garlic paste – 1tsp
• Salt and pepper to taste
Start by heating a frying pan and little oil, add the chicken , ginger and garlic paste, salt and pepper! Let it cook till a nicely golden color!
Once cooked, take it out the pan and reserve in a bowl.
In the same frying, add little more oil, then the onion rings and the brown sugar. Let it caramelized uniformly and check it from time to time!!!
This is how i like it! Nicely caramelized and it also took the chicken taste which was earlier in the pan!
Next step is to fill up the panini bread! I started by applying the ketchup/mayo mix on the bread then i added the lettuce leaves!
Then i put evenly the cooked chicken and some gherkins slices!!!
Next i added the caramelized onion and on top i put the tomato slices! It was already giving me water in my mouth.
Lastly i added the cheese slices and close the panini! It was ready for the grill!!!
The grill was well heated and i grilled it for 2 minutes till well crisp on the outside while soft and melty in the inside.
Et Voila!!! Here is how i had it today for lunch! Accompanied with some French Fries and some more ketchup!!! Simply Delicious!!!
