Today a short post and 2 small recipes! I just had to share this with you guys, as those pancakes are amazing and if someone is looking for simple Sunday pancake inspiration, this is the one to go for!

MACA PANCAKES to die for!
Recipe
Ingredients:
- 1 cup rolled oats
- 1 cup oat milk or any other no-dairy milk
- 1 tbsp chia seeds
- 1 ripe banana
- 1 handful dates
- 1 tbsp maca powder

Method:
- Blend all the dry ingredients in a blender until you get a fine powder. Add the dates and the no-diary milk. Blend and set it set for 5 minutes.
- Heat a non-stick pan on medium heat. Add a little coconut oil to the pan.
- For one pancake add about 1 tbsp of the pancake batter to the pan.
- Cook on both sides for 2-3 minutes.
- Enjoy with hazelnut butter, melted vegan chocolate, and fresh berries!

Caramel Maca Ice-Cream:
Ingredients:
- 3 frozen chopped bananas (freeze overnight or at least 4 hours)
- 1 tbsp maca powder
- 1 tbsp nut butter of choice
- a splash of no-diary milk or coconut milk
Method:
- Blend the frozen bananas with the other ingredients in a food processor or high-speed blender until you have a smooth ice cream. Scoop in a bowl and enjoy immediately with some of your favorite toppings!
