Classic, Creamy, Comforting and Healthful Lamb's Quarter and Mushroom Soup Recipe from our Sustainable Outdoor Kitchen


We're sharing a classic soup recipe to celebrate the fall! 

Creamy mushroom soup is improved by the addition of extremely nutritious, beyond organic, wildcrafted lamb's quarter. This plant is said to be second only to amaranth in terms of nutrition, and it grows abundantly as a "weed" in many parts of the world. If you know how to choose wild mushrooms, you can harvest them from nature as well. What's more fun than foraging for your dinner?!

All of our cooking is done in our outdoor kitchen over the rocket stoves we built by hand, so for us that's a very enjoyable aspect of preparing and sharing meals too. We greatly honor our food, and it is our great pleasure to share the abundance. Soups are crowd pleasing favorites, especially when the weather turns cold this time of year!
