Hope your Saturday is lovely. It's very windy here and pretty cold. I planned to prepare some kind of ice dessert for this evening, but maybe will prepare cupcakes instead, I don't know yet, can't make up my mind for now π
Here I am hiding in my basement library as the boys are screaming bloody murder to each other. They are playing zombies π€£ But my gosh, they can be super loud.
Continuing my 30 Days of Indonesia series, I made these cake slices called Kue Kacamata (Mata Roda) - literally translated as Eye Glasses or old style Car Wheels, since they are sliced round-shaped. I'd rather call them Unicorn/Rainbow Slice though, as they are pretty colorful π
This traditional cake is originally from Central Java and my boys especially my oldest likes it very much.
ingredients
- 1 1/2 ripe plantain
- 454 g frozen grated cassava, thawed
- 1/4 cup + 1/3 c sugar
- 1/3 c desiccated coconut, unsweetened
- a generous pinch of salt
- food coloring as needed, vegan friendly
- 2 tsp vanilla essence
- banana leaf for wrapping
additionals
- 1 c desiccated coconut, unsweetened
- generous pinches of salt
- a little water, just to moist the coconut a little
how to
- heat your steamer, steam banana leaf pieces for a minute
- in a bowl, mix cassava, coconut, salt, vanilla
- divide mixture into 4 as add in food coloring
- slice a plantain into two
- place a spoon pf each mixture on banana leaf, top with a slice of plantain, wrap into a roll, secure ends
- repeat steps twice more (you should come up with 3 rolls)
- steam roll for an H
- let cool completely on the steamer
- mix coconut, salt and a little water, microwave for 10-15 secons
- unwrap cassava rolls and roll them one by one on warm coconut
- slice and enjoy ππππ

Kue Kacatama, tau ga? Ada pula yang menyebutnya sebagai Mata Roda. Kue ini berasal dari Pati, Jawa Tengah
Kuenya legit terbuat dari singkong parut dan disajikan dengan kelapa parut yang gurih. Mantaaaap π

bahan-bahan
- 454 g singkong parut siap pakai
- 1/3 gelas kelapa parut kering siap pakai
- sejumput garam
- 2 sdt esens vanilla
- 1/3 gelas + 1/4 gelas gula pasir
- 1 1/2 batang pisang plantain
- pewarna makanan secukupnya
- daun pisang
bahan tambahan
- 1 gelas kelapa parut kering siap pakai
- 1/2 sdm air
- sejumput garam
cara membuat
- panaskan kukusan
- campur singkong, kelapa, garam, gula pasir, bagi menjadi 4 dan beri warna
- potong 1 pisang menjadi 2
- ambil selembar daun pisang (akan jadi 3 gulung)
- taruh selang-seling adonan singkong, beri 1 potong pisang, gulung. Sematkan ujung2nya dengan tusuk gigi
- kukus selama 1 jam, biarkan dingin suhu ruangan
- campurkan kelapa parut, air dan garam, panaskan di microwave 10-15 detik
- gulingkan singkong dan iris
- sajikan π
