Rougaille is one of the many classics of Mauritian dishes
that is just loved by everyone on the island.
It is essentially a tomato-based dish, with incredibly rich flavours!
A lot of spices are used to make it have a really unique taste! Since this recipe is passed down from generation to generation, there are quite a few variations of spice combinations: onions, garlic, ginger, thyme, chilies, coriander, spring onions, curry leaves, etc.
Rougaille can be made with meat, fish, seafood, eggs, vegetables , the choices are endless! I personally prefer salted fish , despite it's saltiness, it is just yummy!
You can either eat it accompanied with steamed rice or bread!
So without losing anytime, let's get in the kitchen and discover this amazing dish from Mauritius!
To make this yummylicious Salted Fish Rougaille you will need :
• Salted Fish 250gms
• Ginger/Garlic paste 1tbsp
• Fresh Coriander – 10gms
• Fresh Thyme – 1 branch
• Curry Leaves – 1 branch
• Vegetable oil – 2tsp
• Tomato 1pc
• Onion – 1pc
• Chili 2pcs
To start this recipe, boil the salted fish in hot water for 2 minutes to reduce the saltiness level!
After 2 minutes, let the salted fish to cool and then break it in small pieces! Remove all the fish bones as you can see below!
Next cut the tomatoes roughly and the onion in petals!
Cut the chili in halves!
Chop the coriander leaves finely!
Heat oil in a pan and add the salted fish! Let it cook till a golden brown color!
Add the curry leaves, chili, thyme and ginger/garlic paste in the same pan! Let it cook for further 1 minute! Toss it well together!
Then add the tomatoes and onion petals! Cook for about 5 minutes until the tomatoes have been cooked and reduced to a sauce!
Once you get this result, add the freshly cut coriander leaves and switch off the fire!
The Rougaille is ready to be served!
Enjoy it with some hot steamed rice or bread!
If you can't find salted fish, you can replace by any meat you wish to!
